Muesli Slice

  • 125 g Butter, soft
  • 80 g honey
  • 2 --- eggs
  • 5 --- dates, pitted
  • 80 g plain flour
  • 55 g almond meal
  • 200 g Fruit muesli

Recipe's preparation

    Muesli Slice

  1. Place butter and honey in the bowl.  Mix for 40 seconds at 50 degrees at speed 4.  Scrape down sides of the bowl.  Add eggs and dates, mix for 10 seconds on speed 5.  Add flour, almond meal, fruit muesli (or 170g oats and 30g sultanas) and mix for 10 seconds at speed 5 (use Reverse Counter-clockwise operation if you want a chunkier slice).  Smooth into a lightly buttered (or silicone) slice tray, bake at 180 degrees for 20 minutes or until golden.  Wait for five minutes and then drizzle lemon icing over it.  When completely cool, cut into squares.

    Made tonight to use up muesli we don't like.  Used 65g golden syrup instead of honey and didn't bother to ice.  Tasty and healthy treat.  Thanks!
