Mum's Birthdays Sponge Cake

  • 3 eggs
  • 1 pinch salt
  • 120 grams sugar
  • 2 tablespoons cornflour
  • 60 grams flour
  • 1 teaspoons baking powder
  • 400 grams pouring (whipping) cream

Recipe's preparation

    Preparation
  1. Preheat oven to 160°C. Grease & Flour 2 x 20cm springform tins and set aside
  2. Insert butterfly whisk. Place eggs, salt and sugar in mixing bowl and whisk 6 min/37°C/speed 4. Whisk for a further 6 min/speed 4
  3. Add flour, Cornflour and Baking Powder around butterfly whisk and mix 4 sec/speed 3.
  4. Remove butterfly whisk and carefully complete stirring with Spatula
  5. Divide mixture between prepared cake tins and bake for 25-30 minutes (180°C) or until a ooden skewer inserted into the centre of the cakes comes out clean. Transfer cakes onto wire racks and allow to cool completely.
  6. Thoroughly clean and dry mixing bowl and butterfly whisk.

    Insert butterfly whisk. Once cakes are fully cooled, place cream into mixing bowl and whip without setting a time/speed 3, until soft peaks form, watching carefully through hole in mixing bowl lid to avoid overwhipping. Place one sponge cake onto a serving platter and spread whipped cream evenly over the top. Then place the second sponge on top. Dust with icing sugar and decorate with dots of Cream ready to serve.
