Nan's Banana Cake

  • 1 sugar, cup
  • 1.5 self-raising flour, cup
  • 1 teaspoons Bi Carb Soda, small
  • 2 tablespoons Milk, dissolve bi carb soda in milk
  • 2 eggs, lightly beaten
  • 3 bananas, ripe & mashed

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    METHOD
  1. Add 1 cup of sugar to the TMX bowl & blitz 10 seconds speed 9.
    Add 125 grams butter (softened & cubed) 5 seconds speed 8.
    Add butterfly whisk and whip up for 2 minutes on speed 3-4, stop & scrape down sides of bowl half way through.
    REMOVE WHISK!!
    Chop 3 ripe bananas & add to butter/sugar mix,
    mash 5 seconds speed 6.
    Add the eggs through the MC hole with bi-carb soda that has been dissolved in 2 tblsp of milk & set 6 seconds speed 3.
    Add the flour (sifted) to the bowl & mix 1 minuteCounter-clockwise operation4 or until mixture comes together. You don't want to overbeat the mixture. I sometimes hand fold the flour into the batter.
    Grease & line a ring tin & bake 180C for 30 minutes.

Tip

This recipe was written in the late 1890's by my grandmother, it has been passed down to my mum & my sisters & brothers.
I converted it from pounds & ounces to metric & now TM.
You can leave the cake plain or ice with chocolate or caramel icing.This cake freezes well uniced. I use Flavourista chocolate powders in the batter & icing as they are gluten & nut free. Enjoy.
