Ola's Swedish Saffron Bread (Lussekatter)

Dough

  • 1 g saffron thread
  • 150 g sugar
  • 175 g Butter
  • 500 g Milk
  • 50 g fresh yeast
  • 1 tsp salt
  • 1 egg
  • 850-900 g flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mixing Dough
  1. Add 50g Sugar and Saffron, 10 sec, SP9- pour into a small bowl and set aside.

    Add butter - 3min, 60 degrees, SP1 ( or until melted)

    Add milk - 3-4min, 37 degrees, SP1

    Add fresh yeast - 20 sec, SP1

    Add sugar, salt, saffron, egg and flour - 5 sec, SP1

    Dough mode 1min 30 sec - dough will be a little bit sticky

    Place dough in a large bowl and cover with tea towel.  Let it rest for 30-45min

  2. Rolling the Dough
  3. Cut dough in approx 40 pieces.  Roll each piece to a 20cm long snake

     

  4. Shape the Dough
  5. You can shape the dough in many ways.  The tradditional shape is like an S.  Roll each end toward the middle.

    Put the dough on baking paper on a tray and rest under a tea towel for 30-45min.

    Set Oven to 230 degrees.

    Just before you put the bread in the oven whisk an egg and gently brush the bread.  Press in a sultana at each end.

    Bake for 5-10 min.

    Put on cooling rack and cover with a tea towel.

Tip

Suitable for freezing

If you can't get hold of fresh yeast use 17g dry yeast

    Made this at my grandson's request. The bread is lovely, the recipe is a great base for various rolls, etc. This is not sweet at all. I made small rolls & added sultana to the middle with either a little jam on top or vanilla sugar. I also added seeds from 3 cardamon pods as suggested on another site. Thank you for posting this recipe.
