      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat oven to 180 degrees Celscius.
    Line several baking trays with baking paper or grease them well.
    Put butter, sugar and condensed milk into the mixing bowl.
    Mix for 1 minute, speed 5.
    Scrape down bowl.
    Add 250g flour.
    Mix 20 seconds, speed 6.
    Add 250g flour.
    Mix 20 seconds, speed 6.
    Add 250g flour remaining.
    Mix 20 seconds, speed 6, with spatula.
    Divide dough into batches and add flavourings as desired.
    Roll teaspoons full of dough into balls.
    Place on tray 2-3cm apart.
    Flatten with a fork.
    Bake 10-12 minutes until golden brown.
    Loosen on tray.
    After a few minutes move to cool on rack if preferred.
    Once cooled, store in airtight containers, or freeze if you like.

Tip

Mixture can be frozen either rolled as balls spaced on a tray, or rolled into a "log" ready to slice as biscuits when defrosting. Can store dough in the fridge for up to a week in a sealed container.
Flavouring options are things like sprinkles, cornflakes, oats, cocoa powder (may need to add a couple of tablespoons of milk because its dry), cocoanut chips, choc chips, raisins or other dried fruit etc. and essences. Add to your dividided dough batches at the end, stir through, and make however many varieties you'd like!

If you don't keep SR Flour, add 5t to the flour and whisk together first.
