  • 125 g Butter, room temperature
  • 100 g brown sugar
  • 1/2 tsp vanilla essence
  • 1 egg
  • 260 g self-raising flour
  • 1/2 tsp ground sea salt
  • 70 g White Chocolate Chips
  • 70 g dark chocolate chips

Recipe's preparation

  1. Preheat oven to 170 degs (fan forced gas) and line two baking trays with baking paper and set aside.

     

    Place butter, sugar and vanilla essence in TM bowl and cream together for 1 minute on speed 3-4.  With TM still running, add egg through hole in lid and continue mixing on speed 3-4 for 30 seconds.

     

    Add flour and salt then knead Dough mode on interval speed Gentle stir setting for 30 seconds.

     

    Remove mixture from TM bowl and separate in half.  Fold in white chocolate chips to one half of the mixture and dark chocolate chips to the other.

     

    Roll teaspoonfuls of mixture in small balls and then flatten on trays, leaving room for spreading.

     

    Bake at 170 deg in oven for 10-12 minutes (10 minutes for a softer cookie).

     

    Remove from oven and leave on trays for 5 minutes to set, then move cookies to wire trays.

     

    Once cookies have cooled they can be placed in a sealed tupperware container for storing.

    Definitely less sugar is required - next time. I added all choc chips to batch and used the knead function to mix them through rather than using more dishes.  I also used cold butter with no issues.

    Way too much sugar. I reduced it to 90g each but it was too much still. I will try this recipe again maybe with 70g each and also reduce the butter in line with the reduction in sugar
