Paleo Banana Bread (adapted from Pete Evans recipe)

Banana Bread Mixture

  • 75 g almonds
  • 225 g coconut oil
  • 5 Bananas ripe
  • 75 g Coconut Flour
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 pinch sea salt
  • 6 eggs
  • 1/4 tsp Vanilla powder
  • 4 1/2 tbsp honey, plus extra for brushing

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparation
  1. Preheat oven to 160 deg C

    Grease a 20x12 cm loaf tin with a little coconut oil, then line with baking paper

    Slice 1/2 a banana diagonally into 3 pieces, keep aside for top

     

    Mill almonds 30 sec / speed 9 Set aside in bowl

    Melt coconut oil 3 mins / 100 deg / speed 1 (or until oil melted)  Set aside

    Place bananas in bowl5 sec / speed 4

    Add almonds, coconut oil, and all ingredients into bowl20 secs / speed 4

     

    Spoon into loaf tin, spread evenly with spatula. Arrange banana slices on top. Bake in oven for 15 mins, then cover with foil to prevent the top burning, cook for a further 45-50 mins, or until a skewer inserted in the centre comes out clean.

     

    Remove from oven and cool in tin for 10 mins, then turn out onto wire rack. Brush a little extra honey over the top and cool for 20-30 mins.

    Reduced the oil and honey and replaced cinnamon with mixed spice - forgot to add the coocnut flour so added it at the end and mixed again for 15secs - as you can see it doesn't look anything like the photo

    above.

    This is as ugly as when it comes out of the oven but man, it tastes good! I only used 3 tablespoons of honey and 175g coconut oil but it is still absolutely amazing! Thank you!

    I reduced oil to 150g and it turned out perfectly - not too oily or too dry. Thanks for your tip! Next time, I may reduce the honey too - it was very sweet.
