Passionfruit and coconut cake

  • 200 grams plain flour
  • 150 g sugar
  • 175 g unsalted butter, softened
  • 3 egg
  • 50 g dessicated coconut
  • 1 tablespoons baking powder
  • 100 grams sour cream
  • 30 gram Fresh Passionfruit Pulp

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Steps
  1. 1. Preheat oven to 180°C. Grease a round 23cm cake pan. Line the base and side with non-stick baking paper.

    2. Add Flour and Sugar into bowl. Mix 3 seconds/Speed 7

    3. Add Softened butter, eggs, coconut, baking powder and sour cream. Mix 1 min/Speed 6.

    4. Fold in 30grams of fresh passionfruit pulp.

    5. Spoon mixture into the pan and smooth surface.
    Bake for 45-50 minutes or until golden and a skewer inserted into the centre comes out clean. (This really depends on your oven)

    6. Set aside in the pan for 5 minutes to cool before turning onto a wire rack to cool completely.

    note: This recipe can also be turned into cupcakes, just cook for less time.
