  • 70g raw sugar
  • 1tsp vanilla essence
  • 1 egg
  • 120g plain flour
  • 60g Self Raising Flour
  • 60g Milk
  • 20g Deciccated Coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. Preheat oven to 180C. Grease and line a 16 x 26cm (base measurement) slice pan, allowing sides to overhang.

  2. Place raw sugar into mixing bowl and mill 3 sec/speed 10, add softened butter  and vanilla mix for 1 & 1-2min/speed 3 until pale and creamy.  

     

  3. Scrape down sides of bowl before adding egg, mix for a further 30 secs/speed 5. Add flour, coconut and milk and mix on Reverse for 1 min/speed 5.

     

  4. Spread evenly over base of pan. Turbo remaining batter, which may be difficult to get out of bowl for 1 sec, once all spread, bake for 15 minutes or until a skewer inserted into centre comes out clean.

     

  5. Topping
  6. Mill 165g Raw sugar 3sec/speed 10, add 500g cream cheese, at room temperature mix 30 secs/speed 5 - 6 until smooth.

     

  7. Add in 125g sour cream and 2 eggs,  mix 1min/speed 4 then place on Reverse & mix 1 large Passionfruit passionfruit pulp 10 sec/speed 2.

     

  8. Pour over the Coconut Slice Base. Swirl in another large passionfruit pulp.

     

  9. Bake at 160°C for 30 minutes or until just set. Cool in pan. Cut into pieces.

Tip

Bake Base of slice and allow to cool, before preparing Topping.  Serve with whipped cream. (optional)

    So good! I added an extra passionfruit. 1 1/2 for each step and cooked for 5minutes longer. Threw it into the fridge to cool completely before slicing. Tastes amazing.
