Almond Dough

  • 1kg Peeled Almonds
  • 620 g caster sugar
  • 4 egg whites, (room temperature)
  • 1 Full Egg, (room temperature)
  • 1 package Vanillina, (italian vanilla)
  • 2 tablespoon honey
  • soft icing sugar

Recipe's preparation

    Biscotti
  1. Crush Sugar and Almonds 20seconds/spd10 until fine consistency and tip into large bowl
    Mix Egg whites, egg and honey and beat 20seconds/spd5-6 and tip into small bowl
    Put Amond mixture in TM and add the Vanilla and combine 5seconds/spd4
    Then continue to mix on speed 5 and add egg mixture slowly.
    When ready to roll out pre heat over to 180.
    Use 1 dessertspoon of mixture and roll into ball or into S shape in Icing sugar
