Cookies:

  • 120 grams Butter, cubed
  • 150 grams raw sugar, or brown sugar
  • 2 heaped teaspoons cocoa powder
  • 1 egg
  • 250 grams self-raising flour
  • 1 scoop peanuts, roasted and unsalted, Approx. 1 cup
  • 1 level teaspoon vanilla essence
  • 1 pinch salt, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method:
  1. 1. Preheat oven to 180C. Add butter, sugar, vanilla and cocoa to TM bowl. Mix at 60 degrees, 2 mins, sp 3. Scrape down sides of bowl.

  2. 2. Add egg and flour and mix on sp.4 for 40 secs. Scrape sides and base of bowl. Repeat if necessary to achieve even consistency.

  3. 3. Add peanuts to bowl, and salt (if using). Mix Counter-clockwise operation for 30 secs on sp.3. Scrape sides and base of bowl. Repeat step if necessary until ingredients are combined well.

  4. 4. Add tablespoon amounts of cookie dough to a lined oven tray and cook for 20 mins. Cookies should still be soft but starting to form a crust on the outside.

  5. 5. Leave cookies to cool on tray for 5 mins before lifting carefully with a spatula onto a cooling rack. They should harden on the outside but remain soft in the centre.

Tip

Best served warm, so that they have a crisp crust but are still warm and gooey in the centre.

These cookies are chunky, don't flatten them on the tray or they won't have as good texture.

For added decadence, add choc chips or craisins to the last step of mixing.
