Pineapple & Coconut Cake

Cake

  • 280 grams GF or or wholemeal SR flour
  • 440g can crushed pineapple in juice
  • 125 grams Coconut sugar
  • 50 grams dessicated coconut

Recipe's preparation

  1. Preheat oven to 180 degrees and line a square or rectangular cake tin with baking paper.

     

    Place sugar in bowl and mill 4sec speed 9.

    Add flour and coconut and mix 5sec speed 3.

    Add pineapple and mix 10sec speed 5.

     

    Pour mixture into tin and bake in oven for 40-45minutes.

     

    Cool in tin for 5min then on cake rack. When cool, cut into portions and freeze for easy lunchbox snacks!

Tip

Put a frozen portion in a child's lunchbox and it will defrost in time for morning tea.

    What binds this cake together? Usually eggs will do, but with only 4 ingredients I can't see how this is going to work.
