Portuguese Milk Buns

Ingredients

Dough 1

  • 50 grams bakers flour
  • 125 gram water
  • 125 gram full cream milk

Dough 2

  • 60 gram full cream milk
  • 60 grams full-fat pouring (whipping) cream
  • 90 grams Whisked egg, (equivalent to 2 eggs from a 600gr carton)
  • 180 grams Dough 1
  • 2.5 teaspoon instant dried yeast
  • 540 grams bakers flour
  • 90 grams caster sugar
  • 1.5 teaspoon salt
  • 10 grams full cream milk powder
  • 3 teaspoons bread improver
  • 50 grams Butter
  • 1 Whisked egg

Recipe's preparation

    Dough 1
  1. Add all ingredients to the mixing bowl.
    Combine 20 seconds, speed 3
    Cook for 6 minutes, 90 degrees, speed 3, or until the dough mix becomes thick.
    Set aside into a bowl. Cover with cling wrap sticking onto the surface to prevent it drying up.
    Let cool to room temperature.

  3. Add all ingredients in list order.
    Mix for 10 seconds, speed 6 or until everything is combined. You may need to open lid and stir with spatula, and continue on speed 6 for a few more seconds.
    Knead for 6 minutes.
    Transfer to an oiled bowl or a thermomat, and let prove until at least doubled in size. This may take close to an hour as its a heavy milk based dough. You have to let it double in size.
    You may place the dough in a warmed oven (no more than 50 degrees) to help prove the dough faster.
    Once dough has doubled in size, shape 80gr of dough into little loafs of bread or bread rolls.
    Space them 3cm apart
    Let prove again until almost doubled in size or they are almost touching each other
    Pre-heat oven to 180 degrees
    Brush dough with whisked egg for shine and colour
    Bake for 15-20 minutes or until golden brown.

Tip

I use All Natural bread improver from "No Knead" Bread improver.
You have to be patient with the proving time to achieve a really soft bun.
Delicious served with sweet and savoury fillings.
