Pumpkin Cookies

Ingredients

Cookie Batter

  • 50 grams almonds, activated or blanched
  • 100 grams raw pumpkin, roughly diced
  • 1 egg
  • 1 tablespoon Butter, or coconut oil
  • 1 tablespoon Raw Honey
  • 1 teaspoon vanilla extract or paste
  • 1 teaspoon spices, cinnamon, ginger or nutmeg

Recipe's preparation

    Cookie Batter
  1. In the bolw of your Thermomix grind the almonds for 7 secs./speed 9 or until fine. If using half dessicated cocont and half almonds do the same. 

  2. Add the pumpkin and repeat to get a fine paste

  3. Add the rest of the ingredients and blend 5 secs./speed 5

  4. Dollop onto a baking paper lined baking sheet and spread out

  5. Bake for 20-30 minutes at 180'C (depending on your oven) or until cooked through and starting to turn golden.

Tip

What I like about this recipe is it uses raw pumpkin so you dont have to cook it first.

    Although they taste fine and was a good use of leftover raw pumpkin, this recipe didn't really work for me.  The mix was very runny so I added a lot more almond meal.  The cookies were very flat and soft.

    Really nice, but next time I would double or triple the recipe as I only made 8 biscuits. I lowered my oven to 170 too. Don't think the kids will like them, but I'll look forward to eating them with a cup of coffee!  Cooking 7
