Quick Cupcakes

  • 250g unsalted butter, cubed & softened
  • 250g Self Raising Flour
  • 200g sugar
  • 4 eggs
  • 2tsp vanilla
  • 100g Milk

Buttercream

  • 250g unsalted butter, cubed & softened
  • 500g icing sugar
  • 1tsp vanilla

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Quick Cupcakes
  1. Preheat oven to 170. Line muffin tray with 24 cupcake cases. (optional - place a little rice in the tray under each liner to avoid oily bottoms)
  2. Add all ingredients to mixing bowl. Mix 35 seconds / speed 6.
  3. Scrape sides of bowl. Mix 10 seconds / speed 6.
  4. Spoon mixture into cupcake cases. Aprox 2/3 in each.
  5. Bake for 20-25 mins. Cool in tray for 5 mins before transferring to wire rack.
  6. Buttercream
  7. Add butter to bowl. Cream 20 seconds / speed 5.
  8. Insert butterfly whisk. Add 250g icing sugar. Whip 1 min / speed 3.
  9. Scrape sides of bowl. Add remaining 250g icing sugar, vanilla, and colouring. Cream 40 seconds / speed 3.
  10. Scrape sides of bowl. Cream for another 40 seconds / speed 3.
  11. Store buttercream in airtight container or zip lock bag in the fridge for up to a week. And in freezer for up to 3 months. Thaw the day before, and bring to room temp before re-whipping.
