  • 40 g currants
  • 30 g craisins / sultanas / inca berries / gogi berries
  • 100 g almonds
  • 3 eggs
  • 100 g brown sugar or rapadura
  • 125 g coconut oil
  • 50 g cacao powder

Recipe's preparation

  1. * 1/2 cup of dry organic Quinoa to 1 1/2 cups of water cook with gogi berries and currants till water is all absorb this will give you the correct amount.

     

    Pre cook Quinoa with currants and gogi berries.

    Pre heat oven to 180deg

    Place all ingredients in bowl and blend on speed 5 til smooth

    Pour into a round cake tin and bake for 30min or until skewer comes out clean.

Tip

THis cake doesn't rise and is quite dense. Lovely served warm with thick cocnut cream or cold

    This is a lovely decadant cake. Probably could have also cooked my quinoa for longer (I did 20mins varoma temp speed 4). Will make again!

    I think I should have cooked my quinoa longer but the taste was awesome. Kids picked the different texture but loved it anyway, I mean who can turn down chocolate cake no matter it's made of?

    This cake is really delicious. I couldn't get mine smooth though. Next time I'll process the nuts first and then the quinoa and then add the rest. It's definitely worth another go though.  I also used EVO as I didn't have coconut oil. It seems to work just as well.

    I only made this because I had all the ingrediants, but I am so glad I did. I licked the bowl clean, the mixture was so good and the cake is even better Big Smile
