For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Question-when it says heat oven to 160c, is that applicable to a fan forced oven?
I never know whether to just do the stated temp in the recipes or 20c cooler.

Not a comment but a question. How does this go the next day? I'm looking for Christmas inspiration, something I can do in advance.

Nice one, I was a bit worried at some stage because my dollops and raspberry looked way runnier than in your picture. But it turned out okay. Just had a sneaky bit of the still warm slice and it's yummy. I am sure it will be a hit at work tomorrow.
