If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Place sugar into mixing bowl and mill for 1 min/speed 10.
2. Remove 100g icing sugar from bowl and put aside.
3. Add egg white and lemon juice to the bowl and mix 10 secs/speed 6.
4. Transfer icing to a glass bowl, add a few tablespoons of icing sugar and mix in by hand with a metal spoon. When soft peaks form in the icing it is the right consistency for piping work.
5. Spoon icing into piping bag and commence icing.

Tip
When storing your icing in a piping bag wrap with a damp cloth to keep it from drying out too quickly.

Thank you for this easy recipe! Worked great. Much betterthan the store bought pkt that you add water to. I remember watching my mum whip egg white and icing sugar with a fork forever to make this!
