Sante Biscuits

  • 125 g Butter, softened
  • 50 g brown sugar
  • 50 g sweetened condensed milk
  • 5 g vanilla extract
  • 125 g plain flour
  • 85 g desicated coconut
  • 1 teaspoon baking powder
  • 170 g chocolate chips

Recipe's preparation

  1. 1) Pre heat oven to 160 degrees C (fan forced).

    2) Place butter, sugar, condensed milk & vanilla in TM bowl, mix 20 seconds/speed 4. (If the butter is cold from the fridge, place in TM bowl first & soften for 1 minute/50 degrees/speed 1 – then follow the remainder of step 2).

    3) Add flour, coconut, & baking powder. Mix 8 seconds/speed 4. Scrape down sides of bowl & repeat 8 seconds/speed 4.

    4) Add choc chips, mix 10 seconds/Counter-clockwise operation/speed 2.5

    5) Roll spoonfuls if mixture into balls & flatten with a fork onto greased or lined baking trays.

    6) Bake for 15-18 minutes.

    I have made these many times and have just done a double batch for Xmas gifts. I reduce the cocunut to about 40g to suit my fussy son and increase the flour a little to ensure a good consistency. I also don't use quite as many choc chips - just used 200g for the double batch. The only thing I find is thermomix doesn't quite get the choc chips through to the bottom of the mix but the recipe is great. We do wonder why they are called Sante biscuits though??
