      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place the coconut oil in the TM bowl and mix for 2.5 minutes at 50 degrees, speed 1, or until the coconut oil has melted.

  2. Add the brown rice syrup, salt and ground cinnamon, and mix for 1 minute at 50 degrees, speed 1.

  3. Add cranberries, sesame seeds, desiccated coconut and sunflower seeds and mix Counter-clockwise operation 15 seconds at speed 3. 

  4. Use a spatula to scrape down the sides of the TM bowl and mix again Counter-clockwise operation 15 seconds at speed 3.

  5. Pour the mixture onto a rimmed baking sheet lined with baking paper, and spread it out flat with an oil-greased spatula.

  6. Bake for 15-20 minutes at 170 degrees C, or until golden.

  7. Allow to cool completely on the baking sheet before breaking/cracking the brittle into pieces.

Tip

Cranberries may be substituted with currants or other dried fruit of preference.

Will keep for up to 2 weeks at room temperature if stored in an air-tight container.

    This is a great recipe especially good for kids lunch boxes. My kids love it and have requested it be in every lunchbox lol. We used sultanas but can't wait to try with dried apricots next time. Adults enjoy it to tmrc_emoticons.-)
