Sweet Potato Truffles

  • 125 grams walnut pieces
  • 30 grams walnut pieces extra
  • 80 grams cooked sweet potato
  • 250 grams pitted dates
  • 30 grams raw cacao powder
  • 2 teaspoons Maca powder
  • Dessicated coconut for coating

Recipe's preparation

  1. 1. Place the 30g extra walnuts in bowl and chop 2-3 secs Sp 4-5. These should be small pieces, not milled. Set aside.

     

    2. Place the 125g walnuts in bowl and mill 10 secs Sp 7.

     

    3. Add dates, sweet potato, cacao & maca and mix 15 secs on Sp 7.

     

    4. Scrape down sides and mix further 5 secs if needed - mixture should be smooth, with dates well chopped and ingredients combined.

     

    5. Add reserved walnut pieces and mix 10 sec, speed 2 – 3 Reverse.

     

    6. Form into balls and roll in coconut. Refrigerate before serving.

Tip

These can be made without the Maca powder.

Cocoa powder can be used instead of raw cacao.
