Tangy Lemon Squares

  • 125 grams Butter
  • 40 grams raw sugar
  • 150 grams plain flour
  • 3 eggs
  • 220 grams raw sugar
  • zest of lemon peeled with potato peeler
  • 130 grams lemon juice
  • 40 grams plain flour

Recipe's preparation

    Tangy Lemon Squares
  1. Preheat oven to 180 degrees c.  Line base and two opposite sides of a 24 cm square cake tin

    Place the 40 g sugar in bowl and mill for 9 seconds on speed 9

    Add the butter and mix for 10 seconds on speed 5

    Add the 150g flour and mix for 20 seconds on speed 6

    Press into the base of the prepared pan and bake for 15 minutes or until light golden. 

    Meanwhile make topping

    Place sugar and lemon zest in bowl and mill for 20 seconds on speed 9

    Add eggs, lemon juice and the remaining flour and mix for 10 seconds on speed 5

    Poor over base and bake for 20 minutes or until firm.

    Cool completely in pan.

    Cut into squares

    Dust with icing sugar

    Great recipe, I love a really tangy lemon so increased lemon juice to 150ml and zest of 1.5 lemons.
    They turned out delicious. Another to add to my favourites.

    Super easy, very nice. I'd add more lemon rind next time as I like very tart. 

    I followed recipe. Didn't let base cool when I poured  top layer on. Was very thin but came out perfect. Also didnt wash bowl in between making base and top

    Turned out perfect, i halved the sugar in both steps and it really was delicious. Will be making this again and again  tmrc_emoticons.)

    Not a winner for me. I made this and it was a disaster ! I've used the base recipe and would recommend that. But ended up making the base in a round low tart dish and filled it with lemon butter.
