Upside-Down Fresh Strawberry Cake

Ingredients

Fresh Strawberries or other fruit in season

  • 300 grams Fresh Strawberries Washed, hulled and halved, Can vary using any fruit
  • 175 grams Butter, cut in pieces
  • 125 grams caster sugar, Can use other sugars
  • 20 grams vanilla
  • 60 grams water
  • 3 eggs
  • 100 grams almond meal
  • 150 grams plain flour
  • 75 grams Self Raising Flour
  • Whipped Cream optional, to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Turn oven on to 180 degrees & prepare greased tin
  1. I use a round ring tin and I line the base with baking paper and then grease.

    Place strawberries in base of the tin to cover the base.

    Can dip strawberries in Balsamic Vinegar before you put the strawberries in the tin, then sprinkle with a little extra sugar once in the tin. 

  2. Prepare Almond meal and set aside.

    (20 - 30 seconds speed 9)

    May need to mill your sugar into caster sugar first

    (10 seconds speed 9)

  3. Place butter, caster sugar and vanilla in the TM bowl

    Cream Speed 6 for 30 to 40 seconds.

    Add eggs and water, mix on speed 4 for 10-20 seconds.

    Add flours, almond meal and mix speed 4 until combined about 1 minute.

    May need to scrape down sides of bowl and mix again 10 -20 seconds.

     

  4. Bake 30 minutes in the oven or until skewer comes out clean

    Allow to cool

Tip

Can use any fruit for example apple and sprinkle with cinnamon 

Suitable for TM 31 too

    My strawberries were not sweet but it was not the fault of this recipe. Very yummy recipe. Will make again with riper strawberrie.

    This is the most delicious cake! Fantastic and easy recipe. I cut down the sugar a little, it is still sweet and yummy. We used a round tin and it took 40mins. Thanks for this great recipe!
