Vegan Chocolate Orange Cake

Ingredients

  • 275g flour
  • 35g cacao powder
  • 5g baking soda
  • 200g sugar
  • 100g coconut oil
  • 40g orange juice
  • 75g Almond milk
  • 2tsp vanilla
  • 30g vinegar
  • Zest of 1 orange

Recipe's preparation

    Vegan Chocolate Orange Cake
  1. Preheat oven to moderate, 190 degrees

    Place orange zest in TM bowl and mill 30 secs/speed 10

    Add all ingredients except vinegar and mix 30 secs/speed 5

    Add vinegar and mix 6 secs/reverse/speed 5

    Pour into a greased 20cm cake tin and place in oven as soon as possible to ensure all the gas from the vinegar/soda reaction doesn't escape

    Bake for 25-30 minutes or until a skewer comes out clean

    Let it rest before slicing

    Not sure where i went wrong this recipe, I only made a few small changes. I used coconut milk instead of almond, olive oil instead of coconut oil & apple cider vinegar instead or regular vinegar.

    The flavours were there but the cake didn't really rise & when i was mixing it i only reached the halfway point before i had to stop it as it was more like dough than cake mixture.

    Thanks for this recipe, I am going to try it for new vegan converts, but wondering what 'undefined' on the ingredient list is?  With only 5 g of it required, I'm thinking it can't be vital to the success.  Cheers.
