Ingredients

Caramel

  • 125 g Butter
  • 110 g brown sugar

Topping

  • 100 g walnuts
  • 40 g Butter, melted
  • 1/2 tsp ground cinnamon, I didn't measure and sprinkled liberally over the dough

Dough

  • 55 g Butter, cubed
  • 1 tbsp brown sugar
  • 430 g self-raising flour
  • 250 g Milk

Recipe's preparation

    Topping
  1. Melt the 40g butter in the microwave.
  2. Add walnuts to bowl and chop 3 seconds on speed 6 and set aside.
  3. Caramel
  4. Preheat oven to 200 deg fan forced. Line a slice tin with baking paper ensuring that it overlaps the sides.
  5. Place butter for the caramel in bowl and add brown sugar.
  6. Cook for 3 minutes 100 deg speed 2.
  7. Pour evenly into slice pan. Don't wash the bowl, continue with the dough recipe.
  8. Dough
  9. Add flour, 1 tablespoon brown sugar and butter to bowl. Mix for 5 seconds on speed 6 until a breadcrumb consistency.
  10. Add milk and mix for 10 seconds on speed 4.
  11. Set to dough mode for 2 minutes.
  12. Turn out onto a piece of baking paper. Lay another piece of baking paper over the top. Roll out to a 42cmx28cm rectangle.
  13. Brush with melted butter and top with walnuts and cinnamon.
  14. Roll up dough with the assistance of the baking paper from the long side to form a log. Cut into 16 equal portions. (I only got 14 from my dough). Place portions cut side down and side by side over base of pan. Place the pan on a baking tray. Bake for 20 minutes or until a skewer inserted into the bun comes out clean.
  15. Stand in pan for 5 minutes. Turn out onto a wire rack to cool slightly. Serve.

Tip

Recipe converted and adapted from Recipes + June 2014.

Original recipe added additional brown sugar in the topping. I didn't do this and they were still a sweet treat.
