White Chocolate and Raspberry Muffins

Ingredients

12 piece(s)

Ingredients

  • 140 g raw sugar
  • 300 g Self Raising Flour
  • 2 eggs
  • 40 g EVOO or butter
  • 250 g Milk
  • 10 g Vanilla ess
  • 200 g Frozen or fresh Raspberry
  • 140 g White Chocolate Chips

Recipe's preparation

  1. Preheat Oven to 180 celsius or 320 fahrenheit

    Grease a 12 bay muffin tray or 18-20 cupcakes

    Place sugar & flour in TM Bowl and mill on speed 9 for 5 seconds

    Add Eggs, EVOO or butter, Milk and Vanilla.  Blend for 20 secs Speed 6.

    Add White Chocolate and mix on Counter-clockwise operation for 10 Seconds, Speed 4

    Add Rasperries last and stir through with spatula just before spooning into muffin pans.

    Bake in oven for 15-20 minutes or until golden and an inserted toothpick comes out clean. 

    Please note:  Depending on your oven you may need to bake these for slightly longer - see comments below.

    These taste absolutely yummy, however, I don't think the appearance of the muffin was that great. My fruit exploded, the muffins formed peaks that were off centre and there were also sections of crystallised sugar. Next time I'll reduce the sugar. Does anyone know how to stop the off centre peaks from happening??

    These muffins were easy to make and tasted amazing. I used approximately 100g castor sugar and approximately 110g of the white choc chips. Turned out a treat and made 13 medium muffins. I'll be saving this recipe!

    Yummy flavour. Mine took about 45 mins to bake though. I also decreased the sugar to 80g and upped the  raspberries, still sweet enough with the White chocolate.  Thanks for sharing

    Yummo. Quick, easy and tasty. I cut the sugar down to 100g but could probably go lower. Also increased the berries by the weight I cut out the sugar. Made a little more than a 24 mini muffin tin and cooked perfectly in 20 mins.

    I made a really nice variation to this recipe today.  Strawberry and Cream Muffins.  I left out adding the fruit in the mixing process.  Filled my muffin tin liners with batter and then dropped blobs of strawberry coulis on the top of each muffin.  I used a toothpick / skewer to swirl the coulis through the batter, creating a bit of a marbled effect.  Then I baked as per recipe.  My oven only takes 16 mins to bake these beauties - they came out perfect.  But I must say, I little sweet - next time I will use less sugar at the start.

    when I was 15 years old I went to a cafe and had a white choc and rasberry muffin. Ever since that day I've tried to find or make one just like it. Today I found it!! It is absolutely amazing. This recipie is awesome. I added only 60g of sugar as I find the white choc is sweet enough. follwed the rest as it's written. Lovley. 25 mins in the oven for me.

    These are really delicious! Just made a batch for school lunches.....if they last that long!

    Had buttermilk in fridge, close to use by date, so used that, along with oil (no butter in fridge), very moist and light. Made 14 large muffins and took 18 mins.

    Just made them a second time but used 3 bananas and milk chocolate choc chips! Devine!!! changed cooking time to 30 minutes.

    Yum! I cooked these following the directions and they turned out perfectly. I cooked them for 20 minutes in the oven and I got 23 muffins but perhaps I used a smaller muffin tin.  Either way there's plenty to share with friends and still enough for school lunches. Thank you!
