- 75 grams white chocolate melts
- 220 grams castor sugar
- 125 grams Butter
- 125 grams Milk
- 75 grams Self Raising Flour
- 75 grams plain flour
- 1 egg
Preheat oven to 170 degrees celcius (150 degrees fan forced) .
Melt white chocolate melts, sugar, butter and milk for 4 minutes at 80 degrees speed 4, or until butter is melted and ingredients are combined.
Let rest for 10 minutes.
Add flours and egg and mix on speed 4 for 30 seconds, or until combined, scraping down the bowl as necessary.
Line 10 holes of a 1/2 cup muffin tray, then pour 1/4 cup of mix into each of those holes.
bake cupcakes for 30 minutes at 170 degrees celcius (or 150 degrees celcius fan forced).
Let rest for 5 minutes then remove from tray and place on wire rack to cool.

These can be inced with a white chocolate ganache, but they are really delicious on their own as the top goes quite caramelly
