Whole bitter lemon bundt cake

  • 300 g lemons, Organic, untaxed if possible. Or well washed
  • 125 g Butter, Melted
  • 180 g sugar
  • 2 eggs
  • 230 g self-raising flour
  • 50 g Milk

Lemon glaze

  • 210 g icing sugar
  • 40 g lemon juice
  • dash vanilla extract
  • 1 tsp coconut oil, Or butter
  • 20-60 g water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    How to:
  1. Preheat the oven to 170°C ff/ 190°C regular.
    Grease a bundt or loaf pan.


    Cake:

    1. Cut the ends off the lemons, then cut each into quarters. Remove as many of the seeds as possible.
    Add to the Closed lid.

    2. Blitz 10secs/sp8. Remove any obvious remaining pips. Scrape.

    3. Add the remaining ingredients and blend 20secs/sp4.

    4. Spread/pour into the cake tin.

    5. Bake for 30-40 minutes or until cooked when tested.

    6. Cool in the tin for 10 minutes before cooling on a wire rack.

    7. Ice (optional)

    Icing/glaze:

    1. Combine all the ingredients 20secs/sp4, adding enough water to create the desired consistency.

Tip

Yummmmm...
A word of warning.. it's tricky trying to get all the pips out. You may get an occasional straggler in the finished product. Meyer lemons have less pips, so if you can get those, use them.

Also, this cake definitely has a bitter/sweet taste... which I love. But some of you may not.

    Happy with how this turned out. I actually made it to use up the leftover lemon pulp/skin from making Thermomix lemonade. It's not exactly fluffy, but it's dense in a light kind of way that's easy to eat and enjoy. Thank you 😊

    Thank you! I made this today and it sure is tangy. Delicious, hubby really loved it.
    I halved the icing mixture and just made it with lemon juice and half a teaspoon of butter because we like it thin and drizzly.
    Perfect.
