Muffins

  • 400 grams wheat grains, or 2 &1/3 cups
  • 30 grams cold pressed oil (grapeseed, macadamia, peanut, light olive)), or 1/4 cup
  • 500 grams ripe bananas, peeled and quartered
  • 230 grams honey, or 2/3 cup
  • 2 teaspoons baking powder
  • 1 teaspoon Bi Carb Soda
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon vanilla extract
  • pinch of salt (optional)
  • 100 grams roughly chopped walnuts, or 1 cup

Recipe's preparation

    Muffins
  1. Preheat Oven to 180oC. Grease a muffin tray.


     


    Mill the whole wheat grains for 1-2mins/Speed 10. Scrape down the bowl with a spatula.


     


    Add all of the other ingredients except the walnuts.


     


    Mix for 30secs/Speed 5.


     


    Add the walnuts. Mix for 10secscounter-clockwise operationSpeed 4.


     


    Spoon the mixture into the muffin tray. It makes approx. 12 large muffins.


     


    Bake for 20-25minutes.

Tip

This recipe was adapted from the Liver Cleansing Diet.

It makes a dense muffin and is great for breakfast. It is best consumed on the same day.

You can 1/2 this recipe and make 6 large muffins.
