Yorkshire Parkin (Gingerbread slice)

Dry ingredients

  • 150 g rolled oats
  • 145 g plain flour
  • 7 g baking powder, 1.5 tsp
  • 3 g mixed spice, 1 tsp
  • 1 g Mace powder, 1/4 tsp
  • 1 g salt, 1/4 tsp
  • 3 g ginger powder, Optional in place of crystallised ginger

Wet ingredient mix

  • 130 g Butter, Cubed
  • 80 g brown sugar, Lightly packed
  • 85 g Dark Brown Sugar, Lightly packed
  • 85 g golden syrup
  • 125 g treacle, Or molasses

Additional ingredients

  • 1 egg, Large, lightly beaten
  • 2 level tbsp full cream milk
  • 1/4 cup candied/crystallisedginger, Optional. Can replace with 1tsp ginger powder added to dry ingredients

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Preheat Fan forced oven to 150 deg
  1. Add the dry ingredients to your Thermomix bowl.
    Lid on with measuring cup
    Turbo for 2 seconds
    Empty dry ingredients into a medium mixing bowl
    (No need to wash the TM bowl)
  2. Heat wet ingredient mix:
    Add butter, brown sugars, golden syrup, treacle to the bowl.
    Place lid and measuring cup on.
    Heat 7 mins, 95 deg, speed 1 or until sugars have dissolved.
    Set aside to cool for 5 mins.

    Line an 8" square baking tin with baking paper
  3. Pour hot mixture into dry ingredients and stir until combined.
    Add beaten egg, milk and crystallised ginger (optional).
    Stir until combined.

    Pour cake mixture into prepared baking tin and place in the oven.

    Bake for 70 - 80 minutes, or until a toothpick comes out clean from centre.

    Allow to cool. Cut into 16 pieces.

    Place in an airtight container and wait for 3 days to fully develop flavour and texture (if you can wait that long!)

Recipe can be made without Mace.
You can use just golden syrup, instead of addition of treacle.
You can use just brown sugar, instead of additional dark brown sugar.
Crystallised/candied ginger chopped, can be substituted with 1 tsp of ginger powder.

A delightfully chewy, sticky gingerbread type slice, with robust flavours that improve with time!
