Zesty Lemon Biscotti

  • 130 grams unsalted butter
  • 380 grams SR flour
  • 1/4 teaspoon bicarbonate soda
  • 1&1/2 --- egg, 1 egg plus 1 extra yolk
  • 180 grams raw sugar
  • 1 teaspoon vanilla essence
  • Zest level tablespoons lemon
  • 150 grams Sout cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preheat oven 200c, line baking trays with baking paper.
  1. Place butter in bowl, 3 mins, 60c speed 2.
    place all other ingredients in bowl, except icing sugar and combine on Dough modefor 30 seconds or until combined to a firm dough.
    place in a bowl, cover and refrigerate for 10 mins.
    remove from fridge and roll into tablespoon size balls. Roll balls in icing sugar and place on baking tray. Leave room for spreading.
    place in oven and bake for 8 mins or till golden.
    Cool on cooling rack and once cool, sift over more icing sugar to decorate.

    i used lemon and lime zest and realised once I had started that I only had yoghurt which I used instead of sour cream . They worked a treat !
