Zucchini Bread

  • 3 eggs
  • 235 grams vegetable oil
  • 3 tsp Vanilla Paste
  • 300 grams sugar, (half white/half brown sugar)
  • 375 grams plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 1 tbsp cinnamon, powder
  • 250 grams zucchini, (grated by hand)
  • 100 grams walnuts, (chopped by hand)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Zucchini & Walnut Bread
  1. Pre-heat Oven 165'C and prepare 2 loaf pans.

    Beat Eggs, Oil, Vanilla paste, Sugar on Speed 4/20secs

    Add dry ingredients and mix on Speed 4/ 15 secs. Scrape and repeat.

    Mix in zucchini and walnut and stir in by hand, then mix on reverse, Speed 3/ 10 secs.

    Divide mixture into the prepared loaf pans and bake for 45 - 60mins on 165'C.
