Ingredients

My version of Baba's Curry Powder

  • 10 whole cloves
  • 4 cardamom pods
  • 10 Whole Peppercorns
  • 1/2 level teaspoons white pepper
  • 1 cinnamon quill
  • 1 star anise
  • 1/2 level teaspoons dried chilli flakes
  • 2 level teaspoons paprika
  • 2 level teaspoons coriander seeds
  • 2 level teaspoons fennel seeds
  • 1 level teaspoons ground turmeric
  • 1/2 grated nutmeg
  • 2 bay leaf

Recipe's preparation

  1. 1. Add to the mixing bowl 10 whole cloves 4 cardamon pods split in half 10 whole black peppercons 1/2 tsp white pepper 1 cinnamon stick cut in 3 pce 1 whole star anise 2 dry bay leaves 1/2 tsp hot chilli flakes 2 tsp paprika. Place a simmering basket on top of the lid instead of the MC. Heat 8 min/100°C//speed 1. Remove from the mixing bowl and set aside to cool.
    2. Add remaining ingredients into the mixing bowl 2 tsp paprika (can use mix sweet and smoked paprika) 2 tsp coriander seeds 2 tsp cumin seeds 2 tsp fennel seeds 1 tsp ground tumeric 1/2 tsp fresh grated nutmeg and Heat 3 min/100°C//speed 1
    3. Return all spices to the mixing bowl, place MC on top of the lid and Mill 30 sec/speed 10 or untill the spices are milled to your liking ( fine powder). You will end up with approx 40g of babas curry powder.
