Paleo Mayo

Ingredients

200 g

Mayo

  • 1 --- garlic clove
  • 1 egg, Separated
  • sea salt, To taste
  • pepper, To taste
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 250 g olive oil, (1cup)
  • pinch cayenne pepper, Or more depending on taste

Recipe's preparation

    To make the mayo
  1. Place garlic into mixing bowl and chop 3 sec speed 7

  2. Insert butterfly and add egg yolk, salt, pepper , mustard and vinegar and mix 20 sec speed 4

  3. When blades spinning on speed 4 and mc in place , gradually pour in oil onto mixing bowl lid to emulsify. Add oil at a steady pace, slowly to start with and then faster as the mayo starto to emulsify. This process should take 2-3 min

  4. Add egg white and mix 10 seconds speed 4

  5. Place mayo in a container or jar.. Then add cayenne pepper then enjoy

Tip

this mayo can be used for everything and anything. Best to go with my no potato salad

    Super easy, not sure why I kept hesitating to make mayo! It needs a slight tweak for my personal preference, not sure what it is yet, maybe a bit more salt (was very light handed) or a bit more vinegar or perhaps a little bit of sugar. Will keep use this recipe from now on. So glad to be using the whole egg.

    just follow the EDC rec but with my ingredients?
