  • 1 tablespoon oil
  • 360 grams water
  • 1.5 teaspoon rapadura, coconut or raw sugar
  • 1 sachet dried yeast, or two teaspoons of dried yeast
  • 600 grams plain flour, or combination of flour and milled grains up to 600 grams
  • 2 teaspoon salt
  • 2 teaspoon bread improver

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    If using milled grains
  1. Place grains into Closed lid and mill 1 minute / speed 9.

  2. Transfer flour to a bowl and set aside.

  3. Dough
  4. Place oil in Closed lid and brush sides.

  5. Preheat oven - 150 degrees fan forced.

    If using a bread tin use the same oil and brush to prepare tin.

  6. Place water and yeast in Closed lid and heat 2 minutes / temp 37 / speed 1.

  7. Add remaining ingredients and combine 15 seconds / speed 3.

  8. Knead for 6 minutes / Dough mode speed.

  9. Leave in Closed lid to prove for 15 minutes.

  10. Knead for 3 minutes /Dough mode speed.

  11. Shape and place in prepared tin or on prepared tin.

  12. Leave to rise until at least doubled in size and then bake in preheated oven, approximately 20 minutes.

Tip

Use a oiled tray as a lid to obtain a perfect square loaf.

    used two teaspoons of lemon juice as I seen that on another site for not using bread improver.

    I love this recipe.
    i have tried several others - all the other favourites - and I keep coming back to this one.
    It is perfect for my tastes.
    i also substitute up to 300g of flour for wholemeal flour and I love it like that even more!
