Filipino Pandesal (Soft bread buns)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1. Line a baking tray with baking paper and set aside.

    Weigh 350 grams lukewarm water into your clean bowl. Add 5 Tbsp sugar + 3 tsp dried instant yeast. Place lid with MC on bowl. To activate yeast mixture: mix for 3 minutes / 37 degrees / Stir Gentle stir setting.

    Add 660 grams of baker's flour/high grade flour to bowl. Add 3 Tbsp milk powder + 1 tsp salt + 2 Tbsp oil + 1 lightly beaten egg. Place lid & MC on bowl then enter Dough Mode; knead for 2 minutes.

    Place bowl in a greased bowl or wrap up dough in silicone dough mat and place in warm environment to prove until doubled in size. Once proved shape the dough out into a log on silicone mat or floured surface. Cut/portion into 12-16 even sized pieces and form each portion into balls/buns. Optional: dip the top of each bun into breadcrumbs now if you wish.

    Place buns on your lined baking tray with a few centimetres between each. Cover with a clean tea towel and place somewhere warm for 20-30 minutes for their second prove. Meanwhile preheat oven to 160 degrees celcius on bake.

    Place buns into oven for 10-15 minutes, until golden on top. Serve warm or cold. Beautiful just with butter. Can be eaten savoury with soups etc or as a breakfast bun with jam.

Tip

Optional: You can add fillings to these buns (such as a coconut, sugar & butter mixture, a simple sugar & butter mixture, jam or chocolate). Insert filling when shaping the bun portions and ensure you seal dough around filling entirely.

    really liked it and it was a hit with the guests. Tasted like real pandesal! I will be making this again. Loved how the dough wasn't too sticky. Easy to work and roll into balls
