Glazed Lemon Zucchini Loaf

  • 1/2 cup buttermilk
  • 280 grams flour
  • 1/2 level teaspoon salt
  • 2 level teaspoon Baking Power
  • 2 eggs
  • 1/2 cup canola oil
  • 260 grams sugar
  • 2 level tablespoons lemon juice
  • zest of one lemon
  • 185 grams zucchini

  • 2 level tablespoons lemon juice

Recipe's preparation

    cake/loaf
  1. Mix flour, salt and baking powder on spped 5 for 5 seconds

    Set aside in a seperate bowl
  2. Zest the lemon peel by blitzing on speed 6 for 5 seconds and set aside
  3. Grate the zucchini and set aside in seperate bowl
  4. Beqt eggs on speed 4 for 5 seconds
  5. Add oil and sugar and blend on speed 5 for 5 seconds. Scrape down bowl
  6. Add buttermilk, lemon juice and zest and mix for 3 seconds on speed 5
  7. Add grated zucchini and mix for 5 seconds on speed 5. Scrape down bowl
  8. Add dry ingredients (flour, salt and baking powder) and blend for 10 seconds on speed 5. Scrape down bowl and mix again if not fully combined.
  9. Pour into a loaf pan and bake on preheated oven at 160 degees for approx 1 hour or until skewer comes out clean
  10. While still warm pour the glaxe over the loaf and allow to set before cutting.
  11. Glaze
  12. Mill sugar on speed 9 for 10 seconds
  13. Add lemon juice and milk and mix to a paste on spped 6 for 5 seconds

    Scrape down bowl with spatula

    Pour over watm cake

Tip

I used olive oil and it was still very nice. 


I also lined tin with baking paper as I find he glaze can stick to the loaf tin and make it harder to remove.
