Ingredients

Bun Part

  • 60 grams brown rice
  • 50 grams arborio rice
  • 50 grams basmati rice
  • 80 grams Quinoa flakes
  • 50 grams pepitas
  • 25 grams Chickpeas (Dry)
  • 25 grams buckwheat grain
  • 100 grams arrowroot flour
  • 2 teaspoon xanthan gum
  • 4 teaspoon dried yeast
  • 60 grams sugar, can use coconut sugar
  • 1 egg
  • 30 grams coconut oil liquid
  • 420 grams Milk
  • 1 tablespoon applecider vinagar
  • 1 tablespoon ground nutmeg
  • 1 tablespoon Ground Cinnamon.
  • 80 grams sultanas, or mixed fruit

Icing

  • 1 portion Buttercream Icing, See EDC/BCB
  • 40 grams Coconut, Extra for Sprinkling

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preheat Oven to 180 - Grease and Line a 20cm round springform tin.
  1. Step 1  Place into clean dry bowl 

    Rices, Quinoa Flakes, Pepitas, Chickpeas, Buckwheat

     MILL for 1 minute SPEED 9 - SET ASIDE 

     

    NO NEED TO WASH BOWL 

     

    Step 2

    Add to bowl

    Milk and Yeast

    HEAT 2 Mins, 37 degree's , SPEED 1 

     

    Step 3 

    Next add all remaning ingredients (Including reserved rices etc) EXCEPT Sultanas/Fruit 

    MIX Speed 5 for 15 seconds , then KNEAD Dough modeFOR 1 MIN 

    ADD Sultanas/Fruit and KNEAD Dough mode 30 SECONDS 

    Step 4 

    This batter is exactly that - a very thick batter, you will need to scoop the batter out into prepared tin, and then use your wet hands, or a wet spatula to push the batter into the tin, gently ... Once you have it in the tin, smooth over the top (again with your wet hands, dont be shy now ) once nice and smooth, pop over some cling wrap and sit in a nice warm sunny position for approx 20 mins - until it has a lovely rise to the top of the tin 

    Step 5 

    Bake in your moderate over for approx 50 mins, times will vary slightly depending on your oven - Mine is fan forced and took about 55 mins. So just keep an eye on it 

    remove from tin and transfer to a wire rack to cool completely before icing. 

     

    Step 6 

    Once fully cooled, make up one quantity of Basic buttercream icing from the EDC, or Basic Cookbook - MIX through your 40 grams of dessicated coconut SPEED 3 for 5 SECS and ice your fresh bun - sprinkle extra coconut for prettiness x

Tip

This is really easy to make and once you read through you will see the ingredient list looks long, but is not difficult at all. 

Rice can be a mix of all 3, two or even one. I prefer the mix of 3 - Cornflour can be used in place of Arrowroot flour, just be sure it is a GF cornflour.

    Would you mind checking you've submitted the correct quantities for all the ingredients.

    I made this recipe this afternoon but the batter is very very runny, not at all a thick batter - we are very dissapointed.
