GLUTEN FREE CRUMPETS
- 300 grams hot water
- 200 grams Milk
- 1 tablespoon dried yeast
- 2 tsp sugar
- 250 grams GF, Plain flour. I use Aldi or Orgran
- 1 tsp xanthum gum
- 1 tsp GF baking powder, I use Bob's Red Mill
- 2 tsp Bi carb soda dissolved in 3T water
- 1 tsp salt

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- 1. Add all ingredients to the "Closed lid" in the order listed.
2. Blend sp7/30 seconds. It will be a wet mix.
3. Tip onto a bowl and prove 30-45 minutes.
4. Heat a heavy based frypan to med heat and grease well.
5. Grease crumpet rings well and place into the heated pan.
6. Fill rings app. 2/3 full. Sprinkle a little water around rings to create steam and cover with a lid if possible.
7. Cook for about 10 minutes before flipping to the other side. At this stage you can remove the rings to continue cooking the remainder. Sprinkle with water again and cook for a further 5 minutes or until golden and the sides are firm.
8. Serve immediately or freeze for later.

Tip
Don't expect these to be exactly like regular Crumpets. They won't have as many holes.. but the texture is there and they taste really good.
They are best eaten straight away but can be frozen and reheated later.
