Ingredients

Dough

  • 1/2 bunch Fresh herbs (handful - eg. Parsley, basil, sage), ... Choose combination to taste
  • 1 sachet yeast (dry)
  • 300 grams water
  • 450 grams bakers flour
  • 20 grams olive oil, (or more depending on taste/texture looking for)
  • 1 pinch salt

Filling

  • Soft Cheese - eg. Goats, Ricotta, Feta, Cream Cheese
  • Fresh Herbs (additional)
  • Antipasto - eg, Sundried Tomato, a Olive Tapenade, Grilled Eggplant

Recipe's preparation

  1. Chop fresh herbs in the mixing bowl - eg. 5 seconds / speed 9. Put aside

     

  2. Place water and yeast into mixing bowl, 2min / 37degC / speed 1.

     

  3. Add remaining ingredients (in the order they appear) and the chopped herbs.  Mix 6 secs / speed 6.

     

  4. Knead 2 min / Closed lidDough mode.

     

  5. On a lightly floured surface, work dough into a ball. Leave to prove in a thermomat /similar or covered bowl, in a warm place, for 30-40mins.

     

  6. Turn on oven - 200 degC.

    Prepare bread tin / cake tin (for circle grouping) / baking tray.

     

  7. Knock down the dough and roll out into a square.

    spread desired fillings across the dough (with a row of cheese along the bottom, and remainder spread relatively evenly).

     

  8. Roll up the dough, from the bottom and rolling upward into a tube.

    Cut into even pieces and place into/onto the tin - allow to prove another 20mins.

     

  9. Bake for 20 or so mins until golden and make a hollow sound when tapped on the bottom.

    serve warm.

Tip

This is an adapted recipe from the Basic Bread so has similar prep. I got the idea from a TM cooking class.

 

Portion assumes 2x Rollys each.

 

Use whatever flavours and combinations you want - I used basil, parsley and garlic in the dough... And cream cheese with extra herbs in the filling
