  • 250 g almonds
  • 80 g Butter or coconut oil
  • 6 eggs
  • 1 level tbsp Maple syrup, Or honey (optional)
  • 80 g Shredded coconut, Or sliced almonds
  • 15 g Coconut Flour, Or gluten free flour
  • 1 level tsp salt
  • 3 level tbsp LSA
  • 1 level teaspoons bicarbonate of soda
  • 1 level tbsp vinegar, Rice wine or white
  • 25 g sunflower seeds
  • 30 g pumpkin seeds

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1)Preheat oven to 160degrees and grease or line a loaf tin

    2)Place almonds( 250g) into mixing bowl and chop 10sec speed 10

    Transfer into bowl and set aside.

    3)Place butter or coconut oil (80g) into mixing bowl ( if butter still cold , chop in 2cm blocks and 25 sec 50 deg sp5, butter will be soft but not melted)

    4)Add eggs(6), maple syrup(1tbs), reserved almond meal(250g) shredded coconut(80g), 2tbs coconut flour, salt (1tsp), LSA (3tbs)

    5)Biocarbonate of soda 1tsp, place spoon ontop of other ingredients and pour rice wine vinegar (1tbs)ontop of biocarb (reaction will happen).

    6)Mix for 15sec speed 5

    7)Add sunflower, pumpkin and chia seeds mix 10sec speed 4 reverse.

    9)Bake for 45 to 50min until golden on top and a skewer comes out clean

    10)Serve warm with butter
