  • 130 g water
  • 1 level tsp dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon oil
  • 250 g soft dumpling flour (Hong Kong Flour)

Recipe's preparation

    DOUGH AND BUNS
  1.  

    1) Place water, yeast, sugar and oil into mixing bowl and mix 30 sec/ 37 C/speed 3. (Stop mixing when 37 C is reached)

    2) Add flour and salt and mix for 10 sec/speed 6.

    3) Knead 2 min/Closed lid/Dough mode.

    4) Tip out onto silicon pastry sheet or clean bench, knead to form smooth rectangle.

    5)  Roll out to rectangle 35cm x45cm. Brush over surface lightly withwith oil. Roll up like a Swiss roll from shorter side. Cut into 10 or 12 even pieces. Shape and place on oiled baking paper pieces in Varoma Trays, allowing space to rise. (see pictures)

    6) Rise in a warm place eg oven at 50*C for 30 mins.

    7) Add 500g water and steam 10-12 min/100C/speed 3-4.

    tmrc_emoticons.8) Remove lid before turning off to prevent drips of water on the Buns.

    9) These are best eaten straight away but do re-steam well to re-heat

    VARIATIONS:

    1)    Sprinkle oiled (Sesame Oil)surface of dough with salt and then 3 spring onions, finely sliced, especially the green part, and roll up.

    2)    Fill hollowed round pieces of kneaded dough with sweet red bean paste (recipe in Asian Cook Book TM)

    3)    Make like chocolate/plain combination as in Community Cook Book TM.

Tip

To flavour with chopped spring onion, sprinkle them on dough before rolling up
