Gluten Free Fruit Toast

  • 2 pieces orange peel
  • 100 grams sugar, castor or raw
  • 540 grams Gluten free plain flour, white wings brand
  • 1 teaspoons baking powder
  • 1 teaspoons mixed spice
  • 2 teaspoons ground cinnamon
  • 1 teaspoons xanthan gum
  • 50 grams Butter
  • 375 grams Milk
  • 1 tablespoons dried instant yeast
  • 2 eggs
  • 100-200 grams dried fruit of choice, eg sultanas, apricots, cranberries

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add orange peel and sugar to the bowl and mix 10 seconds/speed 9.
  2. Add flour, baking powder, mixed spices, cinnamon and xanthan gum to the bowl and mix 5 seconds/speed 5 and set aside into separate bowl.
  3. Add butter, milk and dry yeast to the bowl and heat for 4 mins/40/speed 2.
  4. Add dry ingredients (set aside earlier) and 2 eggs to the mixing bowl and knead for 1 minute.
  5. Add dried fruit to the bowl and knead for 30 seconds.
  6. Pour mixture into prepared bread tin and leave to rise for approx 30 mins, or until doubled in size.
  7. Bake in 200 degree oven for 30 mins or until dark brown and hollow sound when tapped. Allow to cool before slicing - can be frozen
