Paleo Hot Cross Buns

Ingredients

  • 4 free range organic eggs, Separated
  • 1 Whole Organic Lemon Peel
  • 1-2 centimetres piece of ginger, Peeled
  • 250 g Unsalted Raw Cashews
  • 20 g Avocado Oil, or macadamia is fine
  • 60 g water, filtered
  • 20 g apple cider vinegar
  • 1 tsp All Spice Ground
  • 1 tsp cinnamon
  • 1/2 tsp Cardamon Ground
  • 1/2 tsp nutmeg ground
  • 1 tsp cloves ground
  • 1/2 tsp coriander ground
  • 1/2 tsp Chinese 5 spice
  • 25 g Coconut Flour
  • 1 tsp Bi-carb soda
  • 200 g sultanas, or Raisins

Piping Mixture for Cross

  • 2 tbsp Coconut Flour
  • 2 tbsp Arrowroot

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Egg Whites
  1. Preheat oven to 180 degrees celcius.

    Ensure bowl is perfectly clean and dry

  2. Insert butterfly whisk

  3. Add egg whites into prepared bowl and whip speed 4 for approximately 1 minute till soft peaks form

  4. Set whipped egg whites aside, clean and dry mixing bowl.

  5. Describe the preparation steps of your recipe

  7. Place lemon zest and ginger into bowl, speed 9 for 5 seconds, scrape down mixing bowl.

  8. Add cashews and mill speed 9 for 10 seconds, scrape down mixing bowl

  9. Add oil then mix speed 6 for 15 seconds or until you see the cashews have become cashew butter. Scrape down mixing bowl sides

  10. Add egg yolks, water, apple cider vinegar and spices then mix speed 5 for 15 seconds. Scape down sides of mixing bowl.

  11. Add coconut flour and bi-carb soda before mixing speed speed 4 for 10 seconds, scrape down sides of the bowl 

  12. Pour in prepared egg whites and sultanas or preferred fruit, mix speed 1.5 for 10 seconds. 

  13. Once done give it a final hand mix with spatula, before putting mixture into prepared patty tin with patty cases or greased with your favourite oil or fat.

     

  14. Crosses
  15. Mix flours in a small bowl adding drops of water until it resembles toothpaste

  16. Pipe crosses onto buns before placing into preheated oven for 20-25mins

    These were delicious. You'd hardly know they weren't the standard hot cross bun.
