Pandan Bread with Homemade Strawberry Jam

Pandan Bread

  • 250 g flour
  • 190 g Milk
  • few drops Pandan essence
  • 15 g Butter
  • 1 teaspoon Yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar

Strawberry Jam

  • 500 g strawberrys
  • 50 g honey

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pandan bread
    1. 1, Lightly oil a loaf pan, or line a baking sheet with parchment paper.
    2. 2, Place milk and pandan essence in TM bowl. Cook 4 minutes/50 degrees/speed soft.
    3. 3, Add all remaining ingredients. Mix 20 seconds/speed 3 to combine. The mixture should form a ball and the dough will begin to clean the sides of the TM bowl. 
    4. 4, Set the timer for 1 minute 30 seconds. Set to Closed Lid position. Press Wheat button. Dough mode. The mixture should end up soft and pliable and slightly tacky.
    5. 5, Remove TM lid. Turn TM bowl upside down and undo base unit. The dough will drop out, bringing the blades with it. Remove blades and gather the dough into a ball.
    6. 6, Press dough lightly into the prepared pan, or shape rolls as desired. Brush the loaf or rolls with olive oil.
    7. 6, Cover with a tea towel and set in a warm place to rise until doubled, about one hour.
    8. Bake at 180'c for 20-30 minutes for a loaf, 10-12 minutes for rolls - the cooked bread should be golden brown, and sound hollow when tapped.
  1. Strawberry Jam
    1. Place fruit in Thermomix bowl and chop roughly on speed 4 for 3-5 seconds, depending how chunky you want it.
    2. Add  honey, and agar -agar powder and cook 8 mins/100C/rev/speed 2.
    3. Test if the jam is set by placing 1/2 tsp of jam onto the cold saucer. When it is cool, push it with your finger. If the jam wrinkles, it's ready. If not, add a pinch more agar-agar powder, and cook for another 2 minutes, then re-test.
    4. When jam is set, pour into 2 hot rinsed jars with twist-off lids and close immediately. Turn jars upside down for 10 minutes.
