Tessa Kiros Banana Bread

Ingredients

0 portion(s)

  • 125 grams Butter, chopped and soft
  • 180 grams Dark Brown Sugar
  • 350 grams ripe bananas
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon Ground Cinnamon (sugar)
  • 250 grams plain flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon bicarb soda
  • 3 tablespoon WARM milk

Recipe's preparation

  1. Prehead oven to 180 Celcius.

    1. Cream butter & Sugar on speed 4 for 20 seconds then scrape down sides

    2.  Add all other ingredients and mix on Counter-clockwise operation for 30 seconds speed 6.

    3. Pour into bread tin and bake for 55minutes.

    Try to let cool before eating - if you can! 

    Great to freeze for lunch boxes

    Delicious!!! Light, not dense banana bread!i reduced sugar and used half dark brown sugar and half coconut sugar. I also used vanilla powder instead of the extract. Will be my only banana bread recipe. Also topped with loads of walnuts!

    It was there....then it was gone. Banana bread gremlins ate it all. BTW, you can reduce the sugar by at least a 1/3 and it's still sweet enough. I lined up pecans on the top before baking for aesthetic effect and it looked very professional. Delish recipe and super easy. Many thanks for this.

    Winner, winner! Had to cook a tad longer as I only had 290gm of banana (4) and added the rest in dates (as someone had previously posted to do) and taste is awesome. Some of the banana has sunk closer to the base but all good!  Cooking 7

    Made it gluten free, using plain gluten free flour, and added a tsp Xantham Gum to help keep it fluffy.

    Very nice, glad I made it. I was a bit dubious from some of the comments but this turned out delicious. I only had 240 g of bananas but made the rest up with dates and it worked a treat. Made a big loaf for me and a little loaf for my 15 month old (who scoffed it).

    The mix was very wet/runny and was dense at the bottom when cooked. I did give it a few extra minutes in the oven. Not sure if cooking for even longer would have prevented this. Would use less sugar as well

    Best banana bread I have ever made! I used approx 50g more banana (by accident) but it made no difference. Moist and spot on with flavour. Slices cut and frozen ready for school snacks. delicious!

    Wow, absolutely delicious! Was unsure whether to set temp to 180 fan forced or not, so tried 170 fan forced for 40 minutes. Great timing as the skewer came out clean. Thanks for sharing. So quick and easy to make. Used rapadura instead of brown sugar. Might try wholemeal flour and a bit less sugar next time so make it slightly healthier. This one's going into the recipe collection  tmrc_emoticons.)

    This is the most amazing banana bread I have ever eaten. It was so simple to make & I'm glad I couldn't convince my three and a half year old to add in choc chips, it was perfect as is! Better than any cafe banana bread I've tried (and its pretty much my standard order with a coffee!).

    My loaf is also firm on the bottom, it is a bread and does have that texture.  Could you try it again and cook for a lesser time? Was it still cooked through?  Apologies for not responding earlier also. What setting on your oven did you use?

    Made this , this morning and it was a complete disaster, like a doorstop.  I realised that I did not mix it on reverse, so I am trying it again, fingers crossed it works.
