  • 1 level tsp raw sugar
  • 2 level tsp dried instant yeast
  • 500 grams Wholemeal Bread Flour
  • 100 grams plain flour
  • 1 heaped tsp Himalayan salt
  • 2 level tsp apple cider vinegar
  • 1 level tbsp liquid coconut oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Instructions
  1. Place Water, Sugar and Yeast into bowl Closed lid.
    Set Thermomix for 2 minutes/37°c/speed 1
  2. Add Wholemeal bread flour, Plain flour, Himalayan salt, Apple cider vinegar and Liquid coconut oil into the bowl in order.
  3. Set Thermomix to combine for 15sec/speed 3
  4. Now using the kneading/dough function Dough mode set for 9 minutes
  5. Transfer dough into a large oiled bowl and cover with a tea towel.
    Leave the dough to do it's first prove until it has tripled in size. This may take approx 1hr, however will vary from climate to climate and depend on the time of year.
  6. Once tripled in size turn dough onto your dough mat and punch out the gasses that have formed from the first prove.
  7. Keep dough punched out flat and roll up as if you were making chunky scrolls, then place into 900g loaf tin.
  8. Cover bread tin with a tea towel and leave in a warm area to complete the second prove. If you are in dry heat, wet and wring out the tea towel well before covering the dough.
    Leave until the dough has reached the top of the tin.
    Depending on your oven and how fast it preheat's, now could be a good time to set oven to 180°c
  9. Once dough has reached desired size place in preheated oven and bake for 30 minutes or until golden brown.
  10. Take out of tin immediately and place on cooling rack
    Once cooled down, Enjoy!
