For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    How to:
  1. 1. Heat the milk 2mins/37°C/sp2

    2. Add the oil, sugar and yeast

    3. Add the flour, bread improver, egg and salt, 20secs/sp6. it will be a soft, sticky mixture. No kneading required.

    4. Set aside in a bowl, covered and leave to rise until double.

    5. Stir down to release the gases. At this stage you can either transfer the mixture to a piping bag, with a hole cut in the corner, or spoon it directly into the pan from the bowl.

    6. Lightly oil a heavy based frypan
(with a fitted lid). Set on low to medium heat.

    7. Dollop mounds of mixture into the pan and cover with the lid.

    8. when they are golden brown underneath, flip and repeat.

    9. When cooked through (the sides should not be wet when they are cooked), transfer to a plate.

    10. a serve warm as you would with pikelets or pancakes. I love them with a spread of Philly cheese and jam 😋
