Base
- 140 grams medjool dates, pitted
- 170 grams raw cashews
- 1 pinch salt
Filling
- 100 grams raw cashews
- 1 lime, zest and juice
- 2 Avocados
- 100 grams Maple syrup
- 1/2 teaspoon Vanilla Bean Paste
Topping
- 30 grams pistachios
- 2 pinches salt

Recipe's preparation
Grease a 20cm springform pan.
Place pitted dates, raw cashews and salt into the mixing bowl.
Mill for 30 seconds / speed9
Press onto base of springform pan.
Place cashews and zest into mixing bowl and mill for 10 seconds / speed 9.
Add avocados, maple syrup, lime juice, vanilla to mixing bowl and blend for 30 seconds / speed 5. Scrape down the sides and the bottom of the bowl and blend for a furthur 30 seconds / speed 5.
Spread over base.
Clean and dry mixing bowl then blitz pistacios and salt for 1 second on turbo or until a crumbly texture is achieved. Sprinkle on top of cheesecake.
Freeze for 4 hours.
Take out half an hour before serving to soften.
