Caramel Pie

Pastry

  • 125 grams Butter, room temperature
  • 110 grams sugar
  • 60 grams cornflour
  • 3 egg yolks
  • 230 grams Self Raising Flour
  • 1 teaspoon vanilla essence
  • 1/2 MC iced water

Caramel Filling

  • 260 grams brown sugar
  • 125 grams Butter, room temperature
  • 2 tablespoon vanilla essence
  • 900 grams pure cream
  • 240 grams Milk
  • 100 grams custard powder

Recipe's preparation

    Pastry
  1. Place butter, sugar, cornflour and SR flour in TM bowl and mix for 10 secs/speed 6. 

  2. Add egg yolks and vanilla and knead for 20 secs/Interval SpeedDough mode, at the same time adding enough of the water until a dough is formed.

  3. Roll out or press dough neatly into a well-greased deep fluted pie dish (26cm).  Cover pastry with a sheet of baking paper and fill with dried beans or rice.  Blind bake at 190 degrees/10 mins, then remove the baking paper and beans, reduce the temperature to 160 degrees and bake for a further 7 mins or until pastry is golden in colour.  

  4. Remove from oven and allow to cool before filling with caramel.

  5. Caramel Filling
  6. Place all ingredients into TM bowl and cook for approximately 9 mins-13 mins at 90 degrees/speed 4 .   Listen for when you hear the mixture thicken.

  7. Quickly pour filling into pie shell. 

  8. Place in refrigerator until ready to serve.

Tip

Ensure you grease the pie tin well, preferably with butter.

The cooking time of the caramel can vary anywhere from under 10 minutes to around 15 minutes.  It is important to have it nice and thick.  

Garnish with extra cream and berries if desired.

This makes a large pie and is great for parties and barbeques.

    Disappointing. Pastry wasn’t great & filling didn’t set & also didn’t have a strong enough caramel flavour. I wouldn’t make this again.

    Thanks for sharing! It was delicious! I 've slightly modified your recipe
    since I didn't have any custard powder. I instead used 2 eggs, 50 g of corn flour and 1 tbs of gelatine....just yummy!!!

    Big Smile Absolutely yummo, not too sickly sweet. I didn't quite have enough self raising flour so had to use about 50%  wholemeal self raising in the base and it turned out perfectly . Had to have two pieces it was so yum !
